The two
reputations

Las dos
reputaciones

Every restaurant has two reputations. One is built by its leaders, inside, with the team. The other is earned with guests, outside, through the consistency of the plate and the service. They are not parallel: the first one manufactures the second. Guests never see the manager. They see the consistency the manager built — or let slip.

One reputation manufactures the other

Una reputación fabrica la otra

The leadership reputation lives in how the team talks about you when you're not there. The experience reputation lives in what guests say when nobody asks them. Most restaurants try to fix the second one with marketing. This course fixes it at the source.

The Double Mirror

El Espejo Doble

From the leader to the standard

Del líder al estándar

What a leader values only travels if it becomes a standard. "Good service" is not a standard: if two people can interpret it differently, it doesn't exist. A standard says what, how, how fast, and what done looks like.

Consistency is not measured at the menu tasting. It's measured on the 200th plate of a Saturday night, cooked by the newest person on the line, during the rush. That plate has to be the same as the first one.
